Simple Steak and Gravy Dinner with Poached Spinach and Potatoes

I love how simple German dinners can be.

- Poached potatoes. Basically how I do it is bring water to boil, toss in potatoes to cook til tender.

Drain out the water, but make sure to save and set aside about 2 cups for later.

- Return potatoes to pot add butter and drizzle in some oil.
- Immediately add spinach to still hot pot, one cup of potato leftover boiling water and cover.

At this point, throw your steak on the pan and cook to desired doneness. I love frying steaks in a pan, little bit of butter and medium to high heat.

Once steak is done, set aside to rest! In the meantime, add a bit of flour to oily goodness leftover in the steak's frying pan
Make a simple Roux and add the other cup of leftover cooking water from potatoes to make yourself a simple gravy! Season and serve!
